The Science of High-Heat Karahi Cooking
A true Karahi relies on *Bhunai* — vigorous searing on high heat in a wok with tomatoes and spices until the oil separates. Here is how chicken variety alters the final dish:
Structural Integrity
Because our chickens exercise daily on open pastures, their muscles have developed real collagen cross-linking. The pieces hold their shape even during vigorous spoon tossing.
Maillard Reaction (Browning)
Broiler meat leaches so much moisture that it ends up boiling instead of searing. Desi meat has low water activity, producing genuine caramelized browning that creates deep savory crusts.
Rich Bone Infusion
The dense marrow from mature bones slowly enriches the tomato gravy during the 30-minute simmer, creating an addictive, thick coating on every roti bite.
Authentic Shinwari Desi Chicken Karahi Recipe
Authentic Shinwari karahi uses NO onions, NO red chili powder, and NO commercial spice packets. It relies strictly on the natural depth of pasture Desi chicken, ripe tomatoes, fresh ginger, and green chilies.
Ingredients
Cooking Method
- 1High-Heat Sear: Heat 3 tbsp desi ghee in a heavy iron wok. Add chicken pieces and 1 tsp rock salt. Sear on high flame for 5–7 mins until pale white.
- 2Garlic & Ginger: Add ginger-garlic paste and stir-fry for 1 minute until fragrant.
- 3Tomato Blanket: Place halved tomatoes cut-side down over the chicken. Cover with a tight lid, reduce flame to medium-low, and let steam for 15 minutes.
- 4Peel & Bhunai: Lift lid and discard tomato skins with tongs. Mash tomato pulp into gravy. Add slit green chilies and crank heat to high. Sauté vigorously until the oil fully separates (roghan). Turn off flame, sprinkle fresh black pepper and ginger juliennes, and serve piping hot with tandoori naan!

Frequently Asked Questions
Broiler chicken meat is soft and bloated with water. When exposed to the high heat of a wok (karahi), the meat sheds water, breaks apart into stringy shreds, and leaves a watery curry. Native Desi chickens forage outdoors for 120–150 days; their muscle fibers are lean, tight, and rich in natural savory glutamates. Desi meat browns beautifully, absorbs spices deeply, and retains a satisfying, juicy bite that never turns mushy.
We recommend our '12-Piece Karahi Cut'. A 12-piece cut provides ideal, uniform pieces that allow the meat to cook through evenly and absorb tomato and spice gravies deeply without breaking apart.
For authentic Shinwari, Khyber, or Namak Mandi style Karahi, 'With Skin' is preferred by connoisseurs because the rendered natural skin fat coats the tomatoes and green chilies with extraordinary depth. If you prefer a leaner dish, our 'Skinless' cut is cleanly stripped and hand-trimmed.
Traditional open-wok cooking takes approximately 35–45 minutes of covered simmering on medium-low flame with tomatoes. If you prefer falling-off-the-bone tenderness in under 20 minutes, give the meat a quick 10-minute whistle in a pressure cooker before completing the final bhunai in your open Karahi.
Every bird is 100% Halal hand-slaughtered strictly AFTER your order is placed on WhatsApp. We do not sell pre-slaughtered or frozen inventory. Cleaned, portioned to your exact cut, and delivered chilled same-day.
