The float test is the easiest and most reliable way to check an egg's freshness without cracking it open.

The Science: Why Eggs Float

An eggshell contains roughly 17,000 tiny pores. Over time, moisture evaporates through these pores and air enters, expanding the small air pocket inside the wider end of the egg. The larger the air pocket gets, the more buoyant the egg becomes!
