Key Insights & Takeaways
The Water Float Test is 100% accurate: completely fresh eggs lie horizontally on the bottom.
Eggs that stand upright on their point are aging (air pocket expanded), but still safe for hard boiling.
Eggs that float to the surface have accumulated excess gas and moisture loss — discard them immediately.
The Candling Test: Holding a smartphone flashlight under the egg reveals the size of the internal air pocket.
1. The Science Behind the Float Test
Eggshells contain thousands of microscopic pores. As an egg ages, moisture and carbon dioxide evaporate through the shell, and outside air enters to expand the internal air pocket at the blunt end.
When the air pocket becomes larger than the mass of the egg contents, the egg gains buoyancy and floats to the top of water.
